A few years ago, a former colleague of Scott’s made some pasta salad that we really liked.  Ever since then, it has been a staple of our “up north” visits in the summer.  It is cool, easy and refreshing and even the kids will eat it (most of the time).  Perfect for summer.

Yummy.  This time, I am going to give you the recipe myself and not make you link up for it.  Aren’t I nice?  I couldn’t tell you where the recipe originated, though I am sure several similar versions could easily be found.

Chicken and Pasta Salad

1 box of bowtie pasta, prepared per package directions

2 large chicken breasts, cooked and cubed (Scott usually grills ours)

1 packet Ranch dressing mix

1 cup milk

1 cup mayonnaise

While the pasta is boiling, mix Ranch dressing mix, milk and mayonnaise and set aside.  After pasta is drained, mix the dressing and pasta together.  Gently stir in grapes (as many as seem good to you) and chicken.  Chill until ready to serve.

*If you are serving it pretty soon after making it, stick it in the fridge and give it a gentle stir every 5 minutes or so to speed the cooling process.

Enjoy!  What a nice, light meal for a hot summer night.
